Pecan Crusted Chicken Tender Recipe ..wheat and gluten free!

It's hard to cook sometimes when we are busy.  I like fast, quick and HEALTHY recipes in time crunches.  I love pecan crusted chicken and it usually has wheat flour; making it higher in carbohydrates than grilling plain chicken.  BUT NOT with my cleaned up recipe version!!

Pecan Crusted Chicken
½ cup chopped pecans
⅓ cup coconut flour
½ teaspoon sea salt
½ teaspoon freshly ground black pepper
1 large egg
2 tablespoons organic milk
1 pound chicken tenders

Preheat oven to 475 degrees and line a sheet pan with parchment paper. Mix pecans, coconut flour, sea salt and pepper in a bowl.
Beat egg and milk in a second shallow dish and add chicken tenders, coating them completely. Transfer each tender to the breading, turning to coat evenly. Arrange chicken on the prepared pan. Bake until golden brown and nearly firm, 8 minutes.

I like to brown my first for a minute in a pan with olive oil to make them really crispy.
