Here is a great summer recipe that includes plenty of protein and lots of fruits and veggies all mixed up, and is very tasty! Add to whole grain bread or on top of a bed of lettuce for a salad!!
Summer Hawaiian Chicken Salad
2 lbs of boneless skinless chicken breast cooked
2 1/2 cups of organic celery
1 1/2 cups fresh cut pineapple chunks
1 1/4 cup organic red seedless grapes halves
3/4 cup shredded carrots
1 cup greek yogurt
1/2 cup sour cream
1 1/2 tsp curry powder
2 tsp lemon juice
1 tsp sea salt
Cook chicken breast in boiling water until no longer pink. Slice into chunks. Combine all ingredients in a bowl and enjoy! This recipe is a must try!
